Nata de coco is a distinctive product derived from coconut water, characterized by its chewy and slightly crunchy texture. It is considered a healthy option due to its low calorie and low-fat content. To prepare Nata, fresh coconut water must be collected and filtered using a cheese cloth. The process involves pasteurization through the addition of 8% sucrose, 0.5% ammonium sulphate, and adjusting the pH to 4.5 with acetic acid. A jelly medium is created by introducing Acetobacter xylinum at 10%, which aids in the formation of cellulose substance. The mixture is then incubated at room temperature for about two weeks, resulting in the development of a gel mass or Nata with a chewy texture and a filmy layer on top. The film is then removed, and the mass, which is translucent to white in colour, is cleaned and cut into desired-sized cubes. These cubes, known as Nata, can be further enhanced by adding natural food colours, Flavors, and soaking them in sugar syrup. Nata cubes can be used to enhance the visual appeal and taste of desserts, ice cream, puddings, fruit salads, confectioneries, and sweets.
