Coconut water concentrate is created using fresh coconut water collected under stringent hygiene conditions. To ensure purity and prevent membrane fouling, suspended solids and oil are removed using a three-way centrifuge. If desired, the salts naturally present in coconut water can also be eliminated before concentration by passing the centrifuged water through a mixed-bed ion exchange resin, resulting in a sweeter product.

The concentrated coconut water can be preserved by freezing or canned, serving as a base for both carbonated and non-carbonated coconut beverages.


Additionally, crystallized fruit can be made by coating candied fruit with sugar or sugar crystals, allowing them to crystallize. Candied candy made with tender coconut kernel is a delightful snack option. Tender coconut kernel preserved in sugar syrup can also be used in desserts such as ice cream, custard, or pudding, enhancing their flavor and texture.
