Coconut candy
Coconut candy is made by mixing grated coconut meat with coconut milk. Initially, the grated coconut is moistened with a portion of the milk. The remaining coconut milk and molasses are combined in a cooking pan and heated to boiling. Refined sugar is added to the mixture, which is then cooked until it reaches the hard-ball stage when tested in cold water.
Once ready, the mixture is poured into butter-greased pans, left to cool slightly, and cut into desired sizes. Each piece is individually wrapped in cellophane sheets to maintain freshness and enhance presentation.
Coconut milk powder
Coconut milk powder is created by dehydrating milk under precise conditions. The milk's composition is adjusted to contain 50-60% fat as part of the total solids. Emulsifiers and stabilizers are carefully added to the formulation. The critical step in the process is dehydration, achieved using a spray dryer at high temperatures, typically around 180°C. This rapid dehydration process transforms each tiny droplet into microcapsules, encapsulating fine oil droplets inside.
